Extra dark crystal malt imparts a deep ruby brown hue.
The malt is rich in reducing sugars and provides a heavy dark caramel taste, extra body and flavour stability. Subtle notes of burnt sugar and raisins can be detected.

Pauls ‘Shell Shocker’ Extra Dark Crystal Malt is produced at the Pauls Malt Ltd. plant in Knapton, North Yorkshire, UK.
After the malting barley with a high germination capacity and low nitrogen content has gone through the steeping and germination phase, the malt is heated in a roasting drum. Here, the endosperm (germinating white) becomes a liquid sugar solution, which then crystallises into a glassy sugar layer.
