Glucanase Optimum™ is a Food Grade enzyme that breaks down polysaccharides such as beta glucans and hemicelluloses which helps to improve filtration issues in wort and beer. It also improves brewhouse yields by increasing extract as more wort can be recovered and more starch can be converted as beta glucans are part of the internal cell wall of the barley, degrading the beta glucans allow for more enzyme activity to break down protein and release more starch.
Glucanase Optimum™ used to be Glucanase Premier. The new Optimum, is very efficient with all grists including high wheat and oats. It also has a wider and higher temperature range than premier which increases effectiveness at higher mashing temperatures, such has for darker beers. Essentially, it’s an enhanced version that provides more precise control and improved performance under specific conditions.
Color is amber/brown, but the color may vary from batch to batch.

Storage
Store in a dry cool area (max 10°C) and sheltered against direct sunlight. Under these conditions the specified activity will be maintained for 12 months.
