Lactic acid 80%
Lactic acid is widely used as an acidifier in the food industry, as well as for preservation and flavouring. It has a mild, long-lasting taste and increases flavour intensity. In small quantities, however, the taste is not noticeable. It is used in mashing to acidify the mash to the desired pH value.
Lactic acid 80% is a natural L(+) lactic acid produced by fermentation. It is a yellow, syrupy and hygroscopic liquid, with a mildly acidic taste.
Calcium chloride may also be of interest. This is a brewing salt that also allows you to control the pH value, but gives a fuller, rounder flavour.
