This malt gives a balanced, caramel taste and extra body. At a higher percentage of use the malt gives an amber to red hue.

Pauls ‘Mark 5’ Medium Crystal Malt is produced at the Pauls Malt Ltd. malting plant in Knapton, North Yorkshire, England.

After the malting barley with a high germination capacity and low nitrogen content has gone through the steeping and germination phase, the malt is heated in a roasting drum. Here, the endosperm (germinating white) becomes a liquid sugar solution, which then crystallises into a glassy sugar layer.
