Sorachi Ace was developed in Japan for the Sapporo Brewery in Hokkaido, Japan in the mid-1980s. It was commercially released after 2006 in the US, and has been gaining acreage in the Pacific Northwest. Sorachi Ace is a cross between Brewer’s Gold, Saaz and BeiKei No. 2. The original breeding objective was to develop a variety that was very similar to Saaz, but had a higher alpha acid content.
Aroma
The aroma is very unique and delivers, in combination with potent alpha acid levels, clean bittering. Its bright citrus character makes it welcome in several beer styles, particularly those desiring a distinct lemon citrus flavor, such as: saison, witbier, and exotic riffs on IPA. Alongside its unmistakable overtones of citrus (for example lemon zest, lemon grass, orange, Lemon Zinger® tea) there can also be found a hint of dill.

The values represent the medium range of the past few years. Be aware that specific alpha values can vary in a broad range depending on the relevant crop year.
