Pauls ‘Lucky Squid’ Light Crystal Malt is produced at the Pauls Malt Ltd. malting plant in Knapton, North Yorkshire, England.
After the malting barley with a high germination capacity and low nitrogen content has gone through the steeping and germination phase, the malt is heated in a roasting drum. Here, the endosperm (germinating white) becomes a liquid sugar solution, which then crystallises into a glassy sugar layer.
