Glucoamylase is a food grade enzyme, which cleaves alpha 1.4 and 1.6 linkages in starch producing individual glucose units for yeast to utilise. This allows brewers increased control over attenuation levels or, produces high levels of  saccharification ( starch to glucose) for alternative beverages. Increasing the amount of glucose for the yeast to ferment will boost alcohol levels without increasing your grist bill.
